Brunch Boards

It makes me so happy when the weekend rolls around and I can enjoy a lie in or make plans to spend time with loved ones. Through lockdown, we’ve been so restricted from seeing our nearest and dearest that it has me dreaming of the time we can meet up, hug each other and share our news over a coffee once again.

My closest girl friends and I are massive foodies! Any event planning will certainly revolve around what’s on the menu. Here I’ve put together my all time favourite items in a shared brunch board for that moment when we can finally socialise together. I’ve also created a couple alternatives to suit other tastes. Gina’s Breakfast Board

Ok ok, so not really a board as it’s taking over the whole table. I guess it’s more of a brunch buffet.
To drink we have some Buck’s Fizz, Sparkling Water and of course Coffee. To eat we have some Croissants from local baker – Rock ‘n’ Dough and homemade Cinnamon Swirls, Cookies and Doughnuts following the recipes from Get Cooking. All tied together with a selection of fruit.
The best part about a feast like this is that it doesn’t have to be eaten whilst it’s warm. You can take your time to enjoy it over a long catch up.

Bagel Brunch Board

For those looking for more of a savoury breakfast this board could be the one for you. These Bagels are homemade but you can just as easily use shop bought. You can serve this board ready to eat or have the toppings on the side for a pick n mix vibe. I used Smoked Salmon, Cream Cheese, a selection of Sliced Cheeses and a few variations of Ham and Cured Meats for some savoury options. There is also Peanut Butter with Banana and Nutella with Strawberries for a sweet version too!

Pancake Platter

This platter includes: Canadian style pancakes, Maple cured streaky bacon, Scrambled eggs, Grilled cherry tomatoes and a garnish of Rocket.
These pancakes are made light and fluffy by whisking up the egg whites before folding into the rest of the batter. A fun alternative to buttered toast with your cooked breakfast.
